Personally I preferred the Uchigatana infused with sharp, for the dx bonus. Its faster than the claymore. Str-based weapons are generally heavier and slower, but there are exceptions. Some weapons use both attributes equally, and are better when used in a build with equal Str and Dex, aka a "Quality" build.
